TOSAZU

TOSAZU is a kind of mixed vinegar consisting of vinegar, soy sauce, mirin (rice wine for seasoning) and broth made from katsuobushi (dried bonito). The additional broth gives umami to TOSAZU, differentiating from other vinegars. First, you will taste the umami of the broth, then a hint of sweet aroma, and finally tarty flavor of vinegar.
