Hello, I am Yoko Mitsuki, the ambassador of Japanese tea. 
Japan has been reappraising the value of Japanese tea in recent years as scientific elucidation has proven the benefits of health and beauty it has. Though it has already becoming big as a healthy trendy drink overseas, I do various activities as “The ambassador of Japanese tea” to introduce the beauty of Japanese tea to the people who do not know much about it yet. Japanese tea is not just matcha or green tea, but has wide range of other kinds and each one has different taste and effect. There are even the individual ones that are not well known even in Japan. As a curator, I am going to suggest the ones that we would love people around the world to drink.

The first ones I choose to introduce are the modern-style Japanese tea produced by the third-generation producer of “Kaneroku Matsumotoen” that was certified as the producer with the highest degree of contribution to environmental conservation using     “Shizuoka’s chagusaba farming method(traditional tea-grass integrated system)” that was registered as a Globally Important Agricultural Heritage Systems(GIAHS)in 2013.

■ Japanese tea from the famous area for tea production / Well-established tea garden in Shizuoka

Makinohara-daichi in Shizuoka prefecture is where Kaneroku Matsumotoen is located, one of the famous areas for tea production in Japan. About 200 years ago, in Edo period, Rihachi Matsumoto reclaimed the wasteland and started producing Japanese tea here in Makinohara-daichi. Hiroki who we interviewed, his grandfather established a branch family and founded Kaneroku Matsumotoen in around 1935. The whole family still produces tea together now.

A young producer who is the focus of attention right now, won the first prize in natural flavor category at Japanese tea award and the silver prize at the international tea fair. 

■ Japanese tea leaf original producing method that is recognized as a GIAHS

The chagusaba farming method that Kaneroku Matsumotoen has been using since its inauguration, is that they cut the grasses such as Japanese silver grass and bamboo grass growing wild in “chagusaba” area located around or next to the tea garden through autumn and winter, and then lay them in between furrows after drying.

This method protects the tea garden from wind and keeps temperature of the garden in winter, and it has improved the quality of tea leaves by energizing the soil with organic matter. Plants and insects that are weak for surviving battles can inhabit in chagusaba as it is moderately maintained by humans, and it makes it possible to keep biodiversity. This system was recognized as one of the Globally Important Agricultural Heritage Systems that there are only 31 of them today, and "Shizuoka's chagusaba farming method" was listed on their list in 2013. And Kaneroku Matsumotoen was recognized as the best producer with this system the following year.

■ Tradition and Innovation. Some things to be protected and some things to be changed.

Kaneroku Matsumotoen takes care of the whole process all ourselves, from growing to producing the tea, and it is called “Jisei-chaen”. The tea factory which has almost 100 years of history and has repeatedly been enlarged, and a part of this wooden building still remains its original figure.

Freshly picked tea leaves that were picked from the tea garden spreading out in front of the tea factory at the best timing get processed at this well-kept clean factory.

In brief, Japanese tea is produced by these process “steaming, rubbing and drying”. In old days, these process used to be done all by hand work. Today, they are done by machines but we always keep an eye on them. They go through the whole process to create the tea of the image that they have while checking the tea leaves’ condition. 

“I would like to bring a new development in Japanese tea history” Hiroki says.
In this land with tradition, I can produce tea with the techniques that I inherited from my ancestors. I feel very fortunate. Well, there was a time I was distressed and wondered "what can I do?", I can never surpass anyone, my seniors, my father by doing ordinary work. I decided to create an original tea that represents myself, and did create my first original tea when I was 30.

■ A new era of Japanese tea that is recognized by the world

They kept producing test products, and then finally produced “Kunsei-kocha” that won the silver prize at the international tea fair later on.

『Smoked black tea』
The latest-style Japanese tea that is very unique and incomparable to others. It is a Japanese black tea specially grown by Hiroki without using any pesticide but with great care, smoked using wood chips that are made with barrel that had been used to age Japanese whisky for 10 years.

About 2 minutes after pouring piping hot water into a Japanese tea cup, it starts to turn orange-ish bright clear brown and the smoky aroma starts to fill the air. It has a mild taste that represents Japanese black tea.

My recommended way of drinking this tea is this. Make it strong (using about 100cc of hot water) and pour it over ice cubes…it is like you are having light Japanese whisky, but it’s alcohol-free of course. Enjoying this tea all by myself in a quiet atmosphere listening to jazz or something would be nice. It has been gathering attention from various quarters, and it is available even at liquor stores.

“It does not need to be loved by everyone, I want to produce something unique.”, this is the tea that Hiroki produced with all his heart.

■ The miracle collaboration of the two World Agricultural Heritage

Hiroki was on the right track and produced the next product “Genmai-cha” that won the first prize in natural flavor category at Japanese tea award.

The luxury genmai-cha that is made with Kaneroku Matsumotoen’s specialty the first-grade tea and the rice grown in the rice terraces called “Senmaida” the symbol of “Noto’s Satoyama and Satoumi” in Ishikawa prefecture that was listed on the World Agricultural Heritage list.

Senmaida in shiroyone-machi, wajima-shi is one of the nationally designated cultural assets scenic spots. The view of small rice fields on a mountain slope continuing into the coast is just glorious. But there is only one producer left who carries on the tradition as the field work is extremely difficult and hard. Government and a lot of volunteers have been making great efforts to protect the tradition and the scenic spot.

This precious rice is blended with the tea leaves to the limit after being roasted, the amount of rice is plenty but do not give bitterness to it. (This roasted rice is tasty and can be eaten as is!)

About 1 minute after pouring 180cc of piping hot water (about 90℃) into a Japanese tea cup, the aroma of roasted rice starts to spread. Genmai-cha that has a green color like a feicui, is mild but full-bodied with richness and natural sweetness.

■ This is the orthodox Japanese tea. The finest quality that anyone can make a tasty tea.

The last one to introduce is the quintessence of “Kaneroku Matsumotoen”, Sencha.

“Soil” greatly affects the quality of the Japanese tea. We have kept and nourished the soil after inheriting from ancestors, and produced Sencha that people can enjoy “the natural aroma of Japanese green tea”. It’s the first crop of tea leaves called Ichibancha that has developed its nutrition and flavor throughout the year.

Although “Kaneroku Matsumotoen” is already located in Makinohara-daichi that is suitable for tea production, soil qualities are tested every year, and only the minimum required pesticides are used to grow tea trees.

Tea leaves are steamed slightly longer than usual to keep the balance of its strong flavor and the aroma. Being able to focus on the delicate differences of the outcomes is the advantages that self-owned tea gardens have.

We have produced this tea pursuing the concept of “The Japanese tea that can always be tasty no matter how and who makes it”, which you can add some bitterness to it by using boiling water and remains tasty when it gets cold.

According to your mood and preference, pour 180cc of hot water (from 40℃ to piping hot water) into a Japanese tea cup. If you use piping hot water, wait for about a minute, and if lukewarm water, wait a little longer (about 2 and a half minutes). You can taste its full flavor and the sweetness behind the refreshing taste.

I would choose this tea to relax and reward myself at the end of a hard working day.
