I’m Akihiko Fukazawa!




I cultivate and sell a kind of mushroom "Kikurage” with my father in Tsukuba, Ibaraki prefecture. Kikurage is a well-known food in East Asia, but may not be in other countries.

There is a chance that you already have tasted it before though.

One of the most popular ways of enjoying Kikurage, is probably to have it as a topping for “Tonkotsu ramen (Pork broth ramen)”, (Yes! this black thing that are cut into long thin strips are Kikurage! )




In Japan, Kikurage is usually distributed as a dried product. People love the crunchy texture it gets after being soaked in water. Although it is often treated as “secret ingredient” and not as a main ingredient, it is rich in “Vitamin D, Iron and etc.” and is a recommended healthy food especially for women.



■ “Kurokin-kikurage”, it is like a black diamond.




The Kikurage we cultivate, is a very rare species called “Kurokin” which is very hard to cultivate. There are several other species such as “Arage, Shirokin” and etc., but they are only good for producing in large volume, because they are thin and hard, the texture is not as crunchy as our “Kurokin” and not to mention, they are not very tasty.

On the other hand, “Kurokin-kikurage” is facing these obstacles…

・only the small amount of fungus of this species are distributed.

・A cultivating rate(germination rate) is low.

・Growth management such as water and temperature is very difficult (company secret)

Therefore, it is already hard to find producers even within the country, and its rareness makes people involved in the business call it “Black Diamond of mushrooms”.





■ 6 years of difficulty, the product of blood, sweat and tears




With this hard-to-handle “Kurokin-kikurage”, we had had so many difficulty which we cannot tell you about without tears before we finally succeeded in cultivation. It was 10years ago that we first found “Kurokin-kikurage”. At that time, as my father was running a trading company that handled products of Okinawa prefecture, we started carrying “Kurokin-kikurage” that was produced in Okinawa as well. To be honest, we first had a doubt “Would such a simple, non-special looking food really sell?”, but against the odds, we had to keep getting in a good stock of them, because it just kept selling.

I guess the health boom helped.

So we came up with this idea “If they sell this well, why don’t we just cultivate them ourselves!”, but….it was the beginning of our difficult journey. haha

We asked our business partners to teach us its know-how, and inoculated them exactly the way we were taught, but they never germinated. (This is our company secret, but the key was water and temperature which is very difficult to manage…) We kept failing every single year, but 5 years later we finally succeeded in germinating them, and a year later, we succeeded in cultivating the ones have high enough quality that can be shipped as products. These 6 years of difficulty, repeating to cultivate and waste them, was really a tough period for us.



Now, we produce and ship the finest “Kurokin-kikurage” which we deliver to you with great confidence. Our “Kurokin-kikurage” is very popular for its thick and excellent texture, and also for its profound taste created by our own technique “two-step drying method”, and we have been asked by the major retail distribution chain company “to distribute our products” and “to sell our cultivating know-how and techniques” to them. But we have had to turn them down as “This species is not ideal for a large-volume production”

Our “Kurokin-kikurage” is cultivated using “Kinsho-saibai (bed cultivation method)” in the room where temperature and humidity are strictly managed. And of course, pesticides or food additives which are harmful to human beings are not used.

The bed is made with Japanese natural raw woods such as beech, maple, mulberry tree, and etc., and by the appropriate temperature management we use each season, we are now able to ship them throughout the year. However, it is still a small-sized family-run business, and only a small amount of species of “Kurokin-kikurage” are available, the total quantity that we can deliver to the people around the world is very limited.







■ This “dark, plain-looking thing” saves women around the world




Kikurage is a plain-looking food, but has high nutritious value. Especially the three major nutrients which is very important for “women’s health and beauty”.

・It is rich in iron which reduces outbreak of harmful active oxygen and has an anti-aging effect. It also prevents anemia and is a very important nutrient for fetal development.

・”Vitamin D” and “Calcium” delay the aging of bones which a lot of women have to deal with, and keep healthy hair, teeth, nails and etc.
