I produce Umeboshi in Tanabe, Wakayama prefecture. How time flies, it has already been 20years since I started producing them.

Do you know the traditional Japanese food “Umeboshi”?

Umeboshi is a simple preserved food that is pickled and then sun-dried to bring out its flavor.

It is the food that has been loved by Japanese people from ancient times. There is a literature that states it had been eaten since Nara period (700’s A.D.). Later on in Heian period, the emperor at the time had been eating to cure illness.

Have you ever seen the national flag of Japan?
Yes, the symbol food of Japan is “Umeboshi”.

Extremely sour! But it is the evidence good for the body.


People who taste Umeboshi for the first time may be surprised since it is extremely “sour”.
The fact is that even Japanese people cannot handle it if they put the “whole Umeboshi” into their mouth. haha

But its nutrition such as “citric acid” are very beneficial and it has been cherished as a panacea since old days. The effect for instance, “fatigue recovery” “prevents stomachache” ”purifies blood“ “reduces high blood pressure” “relieve constipation and dietary benefits” “prevents hangover” and etc., are well known.

And it is a must item for Bento (packed lunch) as it prevents foods from putrefaction.

Highest quality brand of Umeboshi “Nankoubai produced in Minabe,Kishu”. 


The area called “Kishu” in Wakayama prefecture where I produce Umeboshi is the very famous area for producing the top quality Ume (Japanese plum) “Nankoubai”.
A special feature of “Nankoubai” is that the flesh is thick and large, and the skin is very soft.

I only use even the best ones out of those top quality Nankoubai and produce uncompromised Umeboshi. Every year around June, we harvest the carefully selected new Ume and preserve them in salt in a barrel for about a month, and then dry them in the sun for three days and three nights.

The feature of the Umeboshi I produce is that we soak "Bincho-tan (kind of high-quality charcoal) the specialty of Kishu” and “Bakuhan-seki (natural stone rich in minerals)” in the specially prepared liquid seasoning with Ume, this removes impurities and brings out "the mild taste" and the minerals make the flesh of Ume puffier and softer.

Learn the recommended way of eating Umeboshi, and become an expert.

Let me introduce the recommended way of eating Umeboshi as most people probably have never heard of Umeboshi itself.

Please try it with plain cooked rice.

But I wouldn’t recommend you to put the whole Umeboshi into your mouth, it would be too sour! haha
Have some rice first and then put just a small amount of Umeboshi into mouth. Every time you chew, the sourness of Umeboshi and the sweetness of rice makes it in complete harmony and you can taste the mouthful of deliciousness beyond description!

And if you feel like enjoying it the way Japanese would do, try “Onigiri”. It’s a rice ball, a traditional Japanese fast food which can be filled with your favorite ingredient. (Most of you probably know this already?)
“Umeboshi Onigiri” is the real standard one. You might become the center of attention if you take it to the office or school!

As an advanced way, you can enjoy it in liquor. Japanese people put smashed Umeboshi into “Shochu no oyu wari (Shochu with hot water)” and enjoy different taste. It’s so-called "an expert way of enjoying liquor". (It also goes well with Sake)

Some foreign people who love Umeboshi enjoy it as a nibble with Dry gin or Red wine. Umeboshi seems to be a universal food that goes well with alcohol.
